Chef Wilkinson Sejour has grabbed his native Creole cuisine by the fishtail and created Island dishes for food connoisseurs. Born in the Bahamas to Haitian parents, Wilkinson has taken the best of the Caribbean and added a Creole twist. His culinary interest started when he was just a boy helping out in his father and grandfather’s seafood market. Observing their techniques for cleaning, spicing and cooking seafood laid the foundation for his career in food preparation. Over the years, Wilkinson began to stir up Creole recipes while mixing in flavors from all over the Caribbean, combining flavors not learned from culinary school, but from his family’s kitchen. His knack for cooking and love of spices eventually became his passion and led him to open his first restaurant, Chef Creole Seafood & Catering Restaurant, with his late brother Jude 29 years ago.
These are benchmarks to his success and the popularity of his food. Chef is consistently improving his service levels and social media exposure. Community service, youth projects and supportive efforts to the surrounding neighborhoods of each of his locations are his standard. He has a collection of honored recognitions from all sectors. Most recently Miami Dade Community College and Miami Dade County Schools honored him as an outstanding supporter of education for his commitment to youth as he urges them to achieve excellence in their lives. Miami Dade Commissioners presented a proclamation to him at the opening of the airport location. In Orlando, The Haitian Leaders of America honored him as the Outstanding Haitian Business Leader of the year. His success began with humble roots and he remains true to those roots by giving back. Musicians, celebrities, locals all eat together in his tiki huts enjoying quality food at great prices!
Distribution is underway for his two distinct private sauce recipes, Pikliz, Epice and Tartar along with other delectable recipes. they are available at the restaurants, website and Amazon.
Chef has been featured in cooking shows including Anthony Bourdain, The Travel Channel, Huang’s World and more. There are numerous features in print, and he is the Celebrity Chef at frequent events. During the government shutdown he fed TSA workers at the airport for free until the shutdowns’ end which was covered on national news. His catering clientele include Vivica Fox, The Obamas, Dwayne Wade, Jay Z, Chris Tucker, Wyclef Jean, Rick Ross, Pit Bull and others. His diverse personality and love for all people make him a favorite at events. Chef Creole’s food crosses all cultural barriers…it’s simply delicious! Chef has very thorough methods of cleaning and seasoning and picks only the freshest of seafoods and meats. He holds every dish and every location to the highest standards. His catering and appearances are always in demand due to his good-natured personality, showmanship and the quality he always gives.
